To be honest, I'd start getting in to the habit of fitting it all on to one map. When I started rendering UV's, I also did multiple maps.
Doesn't mean it's a bad thing, though - I'd still use two different maps for a gun that has an optional scope or attachment. There's no point in using up space on one UV for an attachment that is only present half of the time.
Anyhow, if it doesn't have attachments like that, try keeping it on one map. Fitting it all can be tedious, and your overall resolution may slightly lower but your texture can still look great, and it's less work for your texture artist :p Smaller file size too (overall).
Also, I know CryEngine doesn't like having two texture maps for one gun. One thing to note as well (for most engines), is that having to locate multiple maps for a model can lower game performance more than a high poly count (to an extent, of course. Still good to keep in mind).
For your USP, and smaller models in general, one map will work just fine.
